Being in New Mexico for 18 years, I still cant get away from the Green Chili! I grill out chicken breasts and add green chili on top, with a slice of some white cheese, either mozz, or provolone. YUMM and good for you.
I am going to try to salmon and peaches, sounds terrific.

Hi everyone. looking forward to new recipes, and sharing the few I have started to collect. The grilled salmon looks delightful, I think I will try it without the curry powder though!

I love salmon so I wanted to share a recipe that I love, again its not mine a recipe I came across, tried and really enjoyed and wanted to share.

Grilled Salmon with Curried Peach Sauce

* 2 fresh peaches, peeled and diced
* 1/4 cup honey
* 1 teaspoon curry powder
* salt and pepper to taste
* 2 salmon steaks

1. Preheat an outdoor grill for medium-high heat, and lightly oil grate.
2. Stir together the peaches, honey, and curry powder in a small saucepan over medium heat. Bring to a simmer, and cook until the peaches break down, and the sauce thickens, about 10 minutes. Season to taste with salt and pepper.
3. Season the salmon steaks with salt and pepper, and cook on the preheated grill until the fish flakes easily with a fork, 5 to 10 minutes per side depending on the thickness of the steaks. Pour the peach sauce over the salmon to serve.

Here's a great salsa recipe.

Peach and Cucumber Salsa

* 3 large peaches, ripe but firm (peeled, pitted and finely diced)
* 1 cup English cucumber, unpeeled and finely diced
* 3/4 cup red bell pepper, seeded and finely diced
* 1/3 cup fresh cilantro, finely chopped
* 1 small jalapeño Chile, seeded and finely chopped
* 2 tablespoons fresh lime juice
* 1/2 teaspoon kosher salt
* 1/4 teaspoon freshly ground black pepper
* 3 tablespoons apricot preserves
* (Salt, pepper and jalapeños should be adjusted to taste)

Combine all ingredients in a medium bowl and stir to blend. Cover and refrigerate until needed. Stir before serving. May be prepared 2 - 3 hours in advance.


Serves 4 to 6

This is not my personal recipe just one that I use and love and wanted to share.
